This wine is a multi-vintage blend of 60% Pinot Noir, 37% Chardonnay, and 3% Pinot Meunier, all grown at our cool-climate Bowral vineyards at 700m altitude. It has been made using the traditional method of bottle fermentation, and shows complex aromas of yeast, nectarine/citrus and brioche. The elegant palate is citrus/grapefruit-driven, and has wonderful crisp natural acidity that finishes long, clean, and savoury.
